HISTORICAL CURIOSITIES

The name ‘raviolo’ comes from a medieval term ‘rabiola’, which was used to indicate turnip, as the stuffing was originally made from this vegetable and ricotta cheese. This pasta shape, according to sources, seems to have developed first in Cremona, and then spread to several regions of Italy.
